I'm starting to make freezer meals tonight. I am not going to make a bunch of stuff, just eat night when I make a good dinner, I will make double and freeze half!
Tonight is cherry chipotle chicken!!

Buy frozen bread dough (you can buy 5 loaves in the freezer section for around $5
Let is raise according to the bag instructions
Take the bread and flatten into rectangle type shape (approx 8 in by 12) Do not roll out but flatten with your hands, it helps make the bread lighter tasting in the end
Put whatever ingredients you want in it! My favorites are:
Ham, Swiss cheese, green peppers, onions
Pizza sauce, sausage, pepperoni, moz cheese
Wrap up and pinch ends together and flip over with pinched side down
Butter the top, and put your choice of seasoning (parm cheese, oregano, etc)
Cook on 275 for approx 16 minutes or until it starts to turn golden brown
I made Pioneer Woman/Pastor Ryan's Mexican lasagna this weekend and I think that that will freeze nicely. I plan on making a batch for the freezer once we get a bit closer to the due date. Beware though, the recipe makes enough for about 2 9x13 pans.
I make that much on purpose when I freeze lasagna - just put it in 4 - 8x8 square pans (I buy the cheapy foil ones for this purpose). Any 9x13 casserole recipe makes 2 square pans, generally. I find a square pan to be a supper and a lunch for the two of us.
This got me thinking that I need to start collecting meal ideas (and buy a freezer). Online, I've noticed a lot of websites will give you a few recipes out of a larger cookbook. So I check my library's website and sure enough they have a lot of them. I'll be requesting them and copying pages.

- Thaw and cook for 16 minutes at 275 or until warm
