I had salmon with yellow rice and broccoli....and I'm still hungry. Just ate a fiber one bar to see if it holds me for the rest of the night (it probably won't)

Grilled pork chops, brussel sprouts and butternut squash.
Dh is sick and is asking for comfort food tonight. So I am making tater tot casserole. Here's the recipe if anyone is interested:
1 lb ground beef, seasoned and browned
12 oz frozen green beans, thawed
1 batch homemade "cream" of mushroom soup or 1 can condensed cream of mushroom soup
10 oz grated cheddar cheese (or vegan cheese in my case)
1/2 bag of crispy crown tater tots
Layer the ingredients in the order listed above. Bake at 450 degrees for 14-16 minutes or until tater tots are crisp and casserole is hot throughout.
It's so easy and really hits the comfort food spot.
