W: DH gone, I'm taking the girls to Pei Wei!

Sun: butternut squash mac and cheese
M: Farfalle chicken and cheese veggies
T: Bruschetta pasta
W: Ham and scalloped potatoes

I want your butternut squash mac n cheese recipe. I have seen you make it a couple of times, so I am guessing it's a hit
I love butternut squash, and I would love more ways to serve it.
I am excited about our menu this week. I spent more than I usually do, but we are having some good food!
today: stuffed rainbow trout, butternut squash soup, cauliflower, bread
M: pork with bourbon smoked sugar glaze, baked apples, and baked potatoes
T: halibut, asparagus, and potatoes
W: mushroom ravioli with feta cheese, salad, bread, and broccoli
Th: spaghetti with meat sauce, salad
F: pizza: one roasted tomato, and one cremini mushroom. I got some good mozzarella and guyere cheeses to go with this.
I alternate between butternut squash and sweet potatoes. The recipe calls for sweet potatoes, but I'll use a smallish butternut squash in place (I cut it in 1/2, scoop out the seeds, and bake it in a dish w/ 1in water for around 1 hour, on 400 degrees. Then scoop out the flesh and puree it). Both my picky eater DH and the girls eat it, a miracle

Monday: vegetarian tagine with rice
Tuesday: tofu stir-fry
Wednesday: going out to a new restaurant with BIL & SIL
Thursday: stuffed shells
Friday: stromboli
Saturday: birthday dinner at Benihana
Tonight: Burgers on the grill, sweet potato fries, veg (its about 50 degrees here and I felt like something "summery")
Monday: Stuffed Shells, salad
Tuesday: Chicken Stir fry over brown rice
Wednesday: At a friends house for dinner
Thursday: Chicken Sausage links sauteed with red pepper and onions, served over polenta
Friday: pizza/take out
Saturday: DH's birthday dinner with his family and I'm making Butter Chicken, Basmati Rice, and Naan.
I was bad and never did my menu last week! That is the first week in like, 5 months! lol. Tonight we had mexican - I just make a bunch of stuff and you put it together however you want - seasoned beef, spanish rice, refried beans, tomatoes, lettuce, and cheese. I'll have to work on the rest of my menu!
