Healthy french toast

I just wanted to share this recipe I came up with for French toast.

I still puree vegies and freeze them in ice cube trays so I can sneak some vegies in for DS when he isn't in the mood for them!

1 egg

1 cube of butternut squash (can use carrots or sweet potato puree)

1/4 tsp of parmasean cheese

1 Tbsp of milk 

1 slice of whole grain bread

Mix egg, squash, milk and cheese.  Dunk the bread in the mixture until well absorbed.

Spray a little olive oil in a pan and cook for about 2 min on each side on medium heat.

DS will eat it plain but I put a little ketchup for me!

  • Thanks for this recipe, I made it for DD's dinner tonight :-) I used sweet potatoes and a bit of creme fraiche instead of milk and no cheese. She gulped them down and I was actually happy with an opportunity to give her some fat, I tend to mainly give her veggies and beans so she doesn't get much of that.
