Soup recipe for dinner please???

It's super cold (for CA) and I have fresh shredded rotisserie chicken, and fresh homemade chicken stock as a base.  What to do with it - I am out of ideas....don't have to give me formal recipes, just ideas or whatever.  Thanks!!!!

  • I chop up what ever veggies I have, plus frozen veggies. Add some egg noodles or my favorite fresh tortellini. Cook 10 minutes once the broth reaches a boil. Top with fresh parm cheese. Serve with crusty bread. A hit at our house with all ages!

    Or you could search for a chicken dumpling recipe. I used to make one with Bisquick,

    Soup is perfect for cold weather. Enjoy what ever you make!

  • I sauteed onions and celery, then add them to the chicken broth with the chicken. Get egg noodles or frozen dumpling noodles, boil for a few min until al dente, then add to the mix as well. Salt and pepper to taste.

  • This is a total staple at our house, I bet it would be good with the shredded chicken thrown in!  All you need are canned beans, canned tomatoes, and frozen corn!

  • I have 2 versions of tortilla soup, one easy and one a little more complicated. 

    Super easy: Mix 1 can of mild Rotel, 1 can of refried beans and 1 can of chicken broth.  Add the chicken too, since you already have it.  Heat, then top with tortilla chips, a bit of lime, bit of cilantro and shredded cheese and sour cream.

    You can do a more complicated version by cooking some chopped onions and tomatoes and a little pepper with olive oil.  Then add chicken broth, chicken, etc.
