Food seems so blah lately. I think of some yummy dishes, but they don't get me excited anymore. I made some chicken breast last night and I have 2 left today. I am at a lost on what to do with them!
I feel you on foods! In fact, since being pregnant, I have no interest in cooking anything. I'm rarely in the kitchen for more than 20 mins at a time. It's weird! I used to always have dinner ready and now DH comes home and fends for himself, most days.
Anyway, when we have extra/leftover chicken breasts, we tend to make wraps with them. Slice up the chicken into strips and put into tortillas (we use wheat tortillas). We add stuff like sliced bell pepper, onions, lettuce (we buy Shreds), cheese, sliced olives, tomatoes, etc. And then some kind of condiment like ranch dressing or BBQ sauce. DH eats them cold, but I nuke mine to melt the cheese and soften the wrap. Pretty easy and you get protein and veggies. :-) May not sound too exciting, but I like that it's easy and quick. I used to sautee the veggies with the chicken and eat the whole thing warm, but like I said, I've had no interest in being in the kitchen these days.

We are doing stuffed cabbage (rice and hamburger baked w/tomato sauce) biscuits, and cauliflower. I will have to post a picture later, because its tricky to explain!

How about chicken quesidellas (sp), or tacos. With black beans, cheese and fixings.
Or if you have any pesto or pasta sauce doing a quick pasta dish?
