Okay, we are getting really tired of those ready-made freezer skillet meals...but we have major limitations (both from me and DH) on what we eat...
If you have any easy recipes that go along with the following, I'd love them!
-chicken-based dishes
-not too many ingredients, and nothing too uncommon or something that can only be found at a specialty store
-no crockpot (I am afraid to leave it on when I'm gone...afraid the house will catch on fire with the dog inside when I'm gone...stupid, I know)

Salsa Chicken
Preheat oven to 400. Line a cookie sheet with foil.
Take a pack of chicken breasts and tear the appropriate number of sheets of foil (one for each piece of chicken). Make sure the sheets of foil are large enough to make like a tent around the chicken.
Place 1 chicken breast per sheet of foil and pour salsa over each breast. Wrap the breast in the foil making sure you leave enough room for steaming. Place the packets on the cookie sheet and bake for 40 minutes. When you are finished, you pull the foil off the cookie sheet and don't have to do any dishes!
It is up to you on how much salsa you want to use. I normally make sure the chicken is covered with the salsa. We normally serve it with Spanish Rice or Rice and Black beans.
I just made that sound really complicated, but it really isn't.
DH loves this one and it's super easy.
MOISTEN chicken with water; coat with cheese mixture. Place in shallow baking dish.
BAKE 20 to 25 min. or until chicken is cooked through (165?F).

Check and see if your store carries the "thin and fancy" chicken breasts. I think Tyson makes them. They are just a pre-flattened chicken breast. Of course, you could pound out your own chicken but it's easier to buy them.
Once you have a flattened chicken breast, you can do so much with them!
-Place a piece of cheese and ham or mushrooms (or any other veggies you like) inside and roll and secure with toothpicks. Roll in breadcrumbs if you like and cook at 350 for 20-30 minutes
- Make chicken piccata (my fav) by dredging the flattened breasts in flour, salt and pepper. Cook in a little olive oil and butter on the stovetop, remove from pan and add some chicken broth or wine, lemon juice and some capers (you can find these in the pickle section of most stores). Heat this mixture up, scraping the bottom of your pan and once warmed, serve sauce over pasta and cooked chicken.
This one is easy, and sort of tangy:
1 package of chicken tenders (or you can cut breasts into strips)
1 bottle Russian salad dressing
1 can of jellied cranberries
1 pkg of dry onion soup mix
Lay the chicken tenders along the bottom of a casserole dish.
Mix dressing, cranberries, and soup mix and whisk together until smooth (it will be slightly lumpy)
Pour over the chicken
Bake at 350 about 45 minutes, or until chicken is cooked through
Serve over rice.
I know it sounds weird, but it is VERY tasty.

I guess mine is sort of like Miller's, but it is easy and very yummy!
6 chicken breasts
1 Can cream of chicken soup
1/2 cup dry red wine
Sliced swiss cheese
Plain bread crumbs
Melted butter
*Sorry, these measurements are approximate since I don't have the recipe right on me!
Spray a baking dish with cooking spray and arrange chicken breasts in it. Cover each piece with a slice of cheese. Mix together soup and wine then spoon mixture on top of chicken. Sprinkle bread crumbs on top and drizzle with melted butter. Bake for 45-50 min. at 375 degrees or until chicken is not longer pink.

The Kraft post reminded me of this recipe too. I've made it a few times because it's so easy and it's pretty good.
