I am trying to find a backsplash for my kitchen and would love for you to weigh in-

I agree with you about #1- I think it's too dark and it's a pretty big area.

None of them really make my skirt fly up.
My mom has a really cool looking copper-backed glass tile with her cherry cabinets. It looks really good and just different enough that people comment on it without it taking over the kitchen.

I like this one, great for resale value (not sure if you are concerned about that) Yet rather calm for my taste so I would paint the wall a bold color, maybe a slate blue or green
This is mine (you can see the counters, cabinets and backsplash)
(wall color - which looks slightly "cooler" in this photo than what it really is. It's a touch more gold in person.)

Your 1 is too dark (lighter color, same tile?), 2 is too.. meh. 3 is nice but kinda what everyone has. You seem like you'd need a bit more personality in there than those bring.
I agree with KB on all of it. I'd like 1 in a different color. 2 and 3 are both meh and sort of cheap and dated to me.
I would go with either subway tumbled marble or a subway glass tile in a complementary color (or few colors).
We went with subway tumbled marble because it was cheaper than glass. We got it at Lowe's (they had several colors) and was in sheets so super easy to install (if you are doing it yourself, holy s, are you really doing it yourself?):
