theme for this week is favorite dish. What's your favorite allergy friendly meal? It can be breakfast, dinner, snack - whatever.

I am so new to this... no recipes to share yet.
In general, I'm just finding that my local wintertime farmer's market is my new best friend. I was able to get dried cranberries from a vendor there - usually this would be a no-no food because of the way that commercial dried fruits are made, but when you can talk to the person who makes them, you can rule out allergens. Pretty awesome. I was also able to find bacon, made with nothing but pork, honey and sea salt.
I got a recipe from a friend and adapted it to fit our diet, and it's amazing. Plus, it's SO filling, by the time I empty my bowl I'm stuffed, but I want to keep eating! It's turkey taco soup.
Ingredients:
- 1 lb ground turkey
- 1 med. jar Pace picante sauce
- 2 small cans Rotel tomatoes
- taco seasoning (since the packets have allergens, I made mine by putting garlic powder, onion flakes, paprika, cumin, salt, and mustard seed in my coffee grinder for spices. I'm a huge wimp when it comes to spicy food, so you can easily kick it up)
- 2 cans black beans (or 1 can black beans and 1 can corn, if you can eat corn)
- whatever vegetables you want (last night was potatoes, baby carrots, and broccoli stalks, but it's AMAZING with some zucchini also)
- chicken stock (if you want it soupier)
Directions:
- brown the turkey with half the seasonings (I did this right in the bottom of my big pot because I hate doing dishes, lol)
-once turkey is brown, dump everything else on top, along with the rest of the seasoning. Bring it to a boil, then let simmer for 20-30 mins or until veggies are done. You can also brown the meat in a pan and then toss everything in the crock pot if you want.
I serve it over brown rice, and add some extra chicken stock so the rice soaks up the juices and flavors. Like I said, this dish is ridiculously filling and makes a ton of food. A TON. I'll be eating the leftovers for days, but I don't care because they're so delicious!
we've been dairy and soy-free for about 2 weeks now, egg-free for about a week. things are so much better! still waiting for his skin to heal and his poop to start looking better, but he's no longer all rash-y after eating, spits up a normal amount if at all, and doesn't fuss as much at each feeding, yay.
i'm still super new to this, but my staple dish so far is fried rice. cook some rice, chop up some meat (turkey, sausage, ham, whatever i have on hand), put the meat and some frozen veggies in a pot, add the rice, season however you want, and you're done. i used to use eggs too, just scramble them first.
