I've been trying to give something for 3 days before introducing something else, but it's hard because it seems to be taking forever to build up a varied menu for LO. Just wondering, if you give something like butternut squash for 3 days, do you think you need to also test acorn squash for 3 days? Do you think that foods from a very similar category need their own waiting period?

Honestly, I would just be more cautious about foods that could potentially cause an allergic reaction. I don't think squash or sweet potato fall too heavily into that category. I know there was a poster whose son had a reaction to pumpkin, so you might want to be careful with that. I think banana might be one to be careful with too. I also HIGHLY recommend you make sure to not give too many constipating foods at one time....I made this mistake....it was horrible! Our pedi said to make sure not to serve too much rice cereal, bananas, and potatoes on the same days....they need more fiber, especially at first. You may want to be wary of gas inducing foods as well, like peas/prunes/green beans. Definitely go slowly with these just to make sure your baby doesn't get an upset tummy, you may also want to try these at "lunch" rather then dinner, just so you don't risk them having gas pains at night while you are trying to get them to sleep.
I think around 7 months I also started seasoning some of LOs foods. Nutmeg, cinnamon, rosemary, thyme, pepper...these sorts of things, just no salt or sugar obviously. He will eat anything now that he is starting finger foods, it is awesome! My William Sonoma Baby Cookbook lists all sorts of seasonings and herbs that baby can have once they have tried all of the starter foods.
If your baby does get a little constipated, just give them prunes for a couple days. We actually did prunes for lunch every other day at first, just to help LO with digestion, especially after the "severely constipated" episode. HTH!
