Here's my tips. I had open shelving in a former apartment. You can learn from my mistakes, lol.
Do NOT put open shelving anywhere near/around a stovetop. The dust plus grease residue does NOT wipe off easily.
If you do happen to put open shelving beside a stove, I have learned to only put stuff on the shelves that you can stick in the dishwasher to get off the nasty dust plus cooking grease combo. Definitely do not put cookbooks up there.
Do NOT try to remodel any other part of your house. Drywall dust plus open shelving makes you miserable.
Lastly, get used to dusting. A lot.
Can you tell it drove me nuts? I think I could handle it had it not been near the cooking action, and if there were other cabinets that were servicable to keep the dust off most stuff. Mine was not a good experience.
Just wanted to add that I really love our open shelving! We keep drinking glasses, coffe cups, canned goods, recipe books and some decorative pieces up there. I haven't found an excess of dust on ours or anything but it could be because we put frequently used items up there That would be my tip, though, to put the things you find yourself reaching for often up there.
I agree with Ann that I would not put them above a stove. Our butcherblock countertops get icky grease on them next to the stovetop and it takes a LOT of elbow grease to get them super clean.
