Every morning I have a hard time figuring out what to feed my 15 month old son. He used to be crazy about waffles but he now just throws them on the floor. He's super picky about fruit, in fact the only fruit he'll happily gobble up is blueberries. Everything else he'll either make a "yucky" face at, throw it on the floor or pick it up and let is squish through his fingers. *sigh* I've tried oatmeal, he hates it. What's left?
This morning he had Cheerios, organic blueberries and an organic scrambled egg. Pretty soon he's going to start hating these too!
Re: In a breakfast slump, what does your toddler eat?
Hayden only likes a few things for breakfast. He either eats scrambled eggs, pancakes, or oatmeal. Just an FYI, when we were first trying adult oatmeal, he would only eat the fruit & cream kind. He was super picky about only that one for months (if I gave him another kind he wouldn't eat it). After a few months, he began to eat the other flavors. He also hated eggs for about 5 or 6 months, wouldn't eat them. I would get the "this is gross" look. Than one day, he just started eating them and now he likes them. Keep trying the items he doesn't like, he might change his mind.
ETA: We also have to have a bannana or "nana" every morning with our breakfast. This is a constant in our house.
My LOs LOVE omelets - I usually put just cheese in it but sometimes I had salsa. I never would have guessed it since they are picky as well. Unfortunately they only get them on the weekends, but they gobble them up.
Good luck!

Mark normally eats a yogurt, 1/2 a banana and then a miscellaneous item (waffle, pancake, scrambled egg). He used to love oatmeal and now won't touch it. This week I pureed blueberries and made enough blueberry pancakes for the whole week and then in the morning I just pop them in the microwave for a few seconds, he's been loving them. I was going to add some ground flax seed but I couldn't find it when I was ready to cook them. I also scramble an egg in the microwave with some ham and cheese.

K has pancakes and sausage every weekday morning because she eats breakfast at daycare.
On weekends she'll have the same, along with fruit or yogurt. I'm working on eggs - she hasn't been too excited about them in the past and when I sent some egg and cheese to daycare one morning she threw up (although I'm 99% sure the two aren't related).
Weekdays are tough because I need to keep it simple for daycare. Weekends I try to experiment. I'm loving the ideas here - toast with cream cheese and/or jelly has been a hit in the past so we should revisit that.
Egg cooked in the hole in bread.
Toast with jams or jelly, poached eggs, cheese eggs, cheesy toast, muffins, muffins with cream cheese, bagels, english muffins, granola bars, oatmeal, oatmeal served in an ice cream cone, sausage links...
Here are some ideas from our house:
Trader Joe's pre-made french toast
Cereal breakfast bars (lots of makers but we buy TJ's)
Oatmeal (try it super thick! I hate it like that but sometimes toddlers have consitsancy issues)
eggs
bacon
sausage
waffles/pancakes
yogurt/smoothie (add spinich, and a bannana for a great taste and nutrition combo)
toast with penut butter, and honey
bagel
Bennett eats more at breakfast than any other meal. He's not a big eater at all!
He likes: scrambled eggs (sometimes with cheese), toast, pineapple, cinnamon life, cinnamon toast (we buy the kind that already has it swirled in there), yogurt, apple sauce
