For freezing, I just fill the jar (leaving an inch or so of extra headspace) put a small square of plastic wrap over the mouth, secured in place with the ring, and poke a few holes in it. Once the contents are frozen solid, I replace the plastic wrap with a real lid and call it good. The goal is to *not* create a seal on the jar until the contents have fully expanded.
You will be able to can with a water bath things that are high acid: tomatoes, some salsas, pickled items etc. The recipe will tell you if it's safe. If you need help canning or need recipes try the National Center for Home Food Preservation. That link also has a lot of good info about freezing too.

I've used them for freezing with no problem. Not sure why it doesn't say on the box...I don't think mine did either, but I didn't think to look! lol
