I haven't been to Disney but took LO to Universal to see Harry Potter Since you FF you should be pretty good. (I was pretty much EBFing LO at the time so it was a bit challenging for us) There will be plenty of little side areas where you can get out of a crowd to change LO or feed or just get away from lots of people. I'm pretty sure you can take your LO on a few rides there ... Dumbo, Small World, Jungle Cruise, Carrousel etc. (I might skip the tea cups) You can bring your own stroller or rent one from then. Bring any and all you want to. Oh and double check weather cause Orlando is almost always hot.
We just came home about 2 weeks ago. My little guy spent 90% of the time in the bjorn, he naps much better in it then in the stroller, in fact the only time we brought his stroller was if we had dinner reservations (he does not sit up yet and needed a place to hang out). The bjorn made it easy to go on rides with him, I wasn't waking him up by taking him in and out of a stroller. They have baby care centers in all the parks, but I never used them, I found plenty of spots to discretely nurse him. Let me know if you have any specific questions.
I do not recommend a stroller. There is too much stuff to do that doesn't allow strollers and if LO is napping in the stroller then you would have to wake him up to take him out. And if you're going to any theme park during peak time (march-april, june-sept), it's a serious PITA to have to navigate the stroller in the crowd, make detours to find the ramp instead of stairs, and there is a lot of sights to see that it's difficult to see while lugging a stroller.
IMO, it's easier to wear LO. You have freedom to go where you please, if LO is sleeping you don't have to wake him up to do something, and it's just easier all around. The bjorn would start to hurt my back after about 20 minutes because all the baby's weight is on your shoulders, but when I switched to the ergo I can now wear LO for hours and hours, it's that comfy.
If possible, both you and DH should wear a backpack. One pack for all of LO's things, another for sandwiches, snacks, and drinks. You can't bring a designated cooler into any of the parks, but you can bring food like that.
Edit: I lived in Orlando for 6 years and I still go to WDW several times a year and this is what works for me.
We've been twice w/ DS. Once in November when he was 12 weeks and just last weekend for his 5 month-iversay. Both times he's been very easy. My recommendations are to stay on site (and get the dining plan!) and use Magically Express since you are most likely flying in.
As far as gear we love our City Mini (great for the bus and comfy for DS), love the Ergo (as other posters mentioned it's nice to carry LO around w/o having to do the whole in the stroller/out the stroller dance), and love our Skip Hop saddle bags (we store all kinds of stuff in the them so the diaper backpack would be lighter).
Since we live 2 hours away we go every 2 to 3 months. We'll be back at the end of March and then again in early June. If you have any questions feel free to PM me!

Recommend bringing a stroller. they can take naps in that, and be comfy.
There are Baby Care Centers in each park, VERY Nice, great place to change them, nurse them, feed them, whatever you need.
I found lots of great places to sit and nurse DS, all over Magic Kingdom.
Bring blanket, typical diaper bag stuff, extra clothes.
