Would you please share your recipe for that delish sauce?  I'm home all day bored out of my freaking mind anyways, might as well make some awesome sauce from scratch....and I love me some pasta!  It'll be a whole lot healthier (and better for my bum) than those brownies and cookies i've been baking lately!  Stick out tongue

  • Super easy and you can fudge around with the ingredients a bit:

    Dad's Spaghetti Meat Sauce 

    1/2 cup sliced or diced onion (your preference)

    2 tbspns olive oil (3 if using 2 1/2 - 3 lbs of meat)

    1 -2 1/2 lbs of meat (I tend to use 3 lbs because there is easily enough to freeze; I tend to use very lean ground beef as turkey is a bit too bland)

    6 cloves of garlic, minced (have to differ from my dad here, who loves garlic; I use a bit less but use at least 3-4 and save yourself the headache and use the preminced stuff in the jar; you can use fresh obviously but the other stuff saves time)

    4 1lb cans of tomatoes (you can use plum, regular, fire-roasted -- depends on the flavor you are looking for; I tend to use plum)

    2 8 oz cans seasoned tomato sauce

    1 3 oz can broiled mushrooms (you can use sliced fresh mushrooms instead)

    1/4 cup chopped Italian parsley

    1 1/2 tsp oregano

    1 tsp salt (just season to taste)

    2 pinches thyme (I used to skip this because my mom always hated thyme and the sauce does not suffer one bit, so depends if you like thyme)

    1 bay leaf (I sometimes up this to 2, especially if the leaves are small)

    1 large can tomato paste (I always used a smaller can but whatever)

    water, as needed

    I use a huge electric skillet but you will need a BIG pan or pot.  Cook the onion in the oil until almost tender.  Add the meat and garlic and brown meat (he says lightly, I just cook it).  Add remaining ingredients.  Simmer uncovered for 2 to 2 1/2 hours until sauce is nice and thick, stirring occasionally.  Remove bay leaf (or leaves) and serve over hot pasta.
