Frittata Recipe that gotten eaten up! WW Friendly too

After Amy posted the fried rice recipe (we've already bought some nori), I thought I'd share this, plus with all of us on WW...This was super easy - only used a bowl and the pan it cooked in - and YUMMY!  Ellie ate it up warm and then cold for dinner the next day.  DH and I loved it as well.  A serving size is a quarter of the Frittata and it has a points plus value of 5. 

I used egg beaters, added in some onion with the sprouts to saute, as well as some paprika and garlic powder to the egg mix, and upped the cheese to 3/4 C.  I also just halved the sprouts vs shredding (I like my fingers too much to think about even doing that). Took no more than 15 minutes to prep, including cooking the bacon and sprouts and a little more than 15 minutes in the oven.

  • Hmmm, I don't like brussel sprouts, but maybe this is a way to mask their taste. :)

    DH loves them though so I bet he would really like this. I might give it a try. Could frozen brussel sprouts be used if they are thawed or do they need to be fresh?

    LOL - I was thinking the exact opposite of this. I LOVE brussel sprouts and DH hates them. I am going to try this and see if he eats it. I bet you could also add spinach instead.

    We get cooking woman!  Love the crockpot!  We use it once or twice a week and DH is actually making corned beef and cabbage soup today - which will be nice to come home to in this weather.  Did I send you the pork taco recipe for the crockpot?

    Nope!  But today I'm trying the baked orzo with peas!  I know S will like that along with some grilled salmon!
