DH and the children love bars for breakfast. I cannot feed them the "nutragrain" ones that DH buys. I buy Luna bars, but they are not fabulous either. I wish they would eat Lara bars, but they won't.
Here is Hungry Girl's Breakfast Cookie recipe (1/2 way down the page). I've never tried them, but you may be able to add nuts or something to up the protein.

Curious why? Oh and they are not protein which might be what you are mostly looking for but my kids like the Earth's Best and Gerber cereal bars. I have never made any.

I want them to have protein, fiber, and some fat, nutragrain doesn't have any of that to speak of.
Mel - do you know what the NI is for those? They look yum and super easy!

Hope my question did not sound sarcastic, I really was curious and those are good points.

1/2 cup dates
1 cup almonds
1/4 tsp. salt
1/2 tsp. vanilla
*I also add dried blueberries, cranberries, and a handful of chocolate chips after finished mixing everything in the food processor.
*before doing anything, I would advise ripping off 8 pieces of plastic wrap; about the size of a half sheet of paper.
Combine all ingredients in food processor and process until thoroughly mixed; like this:
Next, roll mixture into a log:
Keep halving log until you have 8 equal parts:
Roll each section and shape into bars:
Wrap bars in plastic wrap:
