Success after IF

What do you make for freezer meals?

I don't have much space so I have to be slective with what I make.

Thoughts?

  • Pizza bake:

    Boil  a box of Riggatoni

    Put it in a baking dish or pan

    set aside

    take 8oz of sour cream and a half a jar of spaghetti sauce, combine it with a half a package of shredded motz cheese and pepperoni slices

    Add that to the  Riggatoni

    Add the rest of the motz on top along with a bunch of pepperoni (like a pizza)

    throw in the oven for 25 minutes at 350.

    And hoila.

  • I don't like how some pasta's come out (esp. gnocci) but we double batch and freeze pretty much everything.

    My top few:

    chicken or fish (talapia) with bread crumbs (dip in egg then bread crumbs)

    Spaghetti sauce with meatballs and sausage

    meat loaf

    chicken parmesean

    BBQ pulled pork (double batch in crock pot then freeze half)

    any soups

    I'll bake a whole chicken on a sunday and then if there's left overs that I'm not using that week I'll shread or pull it and toss it in to use for other meals (enchiladas or tacos) at another time.

    Along those lines - chicken enchiladas do well in the freezer too

     

    If you're short on space I highly recommend getting the zip-lock brand hand pump vacuum bags from your grocery store.

    Get a piece of card board and use it to freeze the bag and it's contents lying flat.

    Then stack things on top of each other simply.

    And don't forget to use a wipe off marker to write on the inside wall of your freezer so you've always got a visible list/menu to help keep you organized.  (put the date on the list too)

    We seriously double batch almost everything I cook at this point.

    I like getting 2 or 3 meals but only washing pots/pans/etc once.

    I love love love the cracker cheese chicken.

    I made quiet a few of these but that one stood out. I've made it since then also.

  • i made a ton of things..but my favorites were the shepard's pie and the chicken pot pie...yum!!  (sorry, I don't have any particular recipes to share because I just winged it!)
