Cooking for 1 ideas

DH is gone this week and usually does our cooking. I'm super spoiled now, but I did teach him all he knows, so I'm debating being lazy vs. proving I've still got it this week. What do you guys do for meals when you're cooking for one?

I'm hoping this post will be the motivation I need to get off the couch, shower, and get my butt to the grocery store...

  • you could cook a bunch of chicken and prepare it differently all week. and cook some chilli bc it's to just heat up during the week.

    mon- chicken w/ rice and veggies

    tues- salad topped w/ chicken.....

  • I'm a pasta-holic so when I'm cooking for just me, I usually cook up a pasta, then each night do something different.

    Mon: Spaghetti w/ meatballs

    Tues: Spaghetti noodles with alfredo sauce and chicken.. ect.

  • Thanks ladies... this post and my growling tummy have motivated me to get moving. Off to the grocery store. The pasta and chicken advice sounds like a good plan.

    Twistedmetal... eggs w/ salami and cheese on rye is a new one for me. Very interesting!

  • When DH is gone I eat all of the foods I can't get him to eat- sushi, eggplant, etc. Yum!
    After two losses, a rainbow arrived! DD born 11.5.11
    Dx with severe Asherman's syndrome after a botched PP D&C (pursuing med mal)
    Hysteroscopy Oct '13, not enough progress 
    Hysteroscopy Jan '14, given an end-of-the-road diagnosis
    Joined International Asherman's Association April '14 
    Not ready to give up yet.
    Hysteroscopy with Dr. Isaacson (an expert in the USA) 6.2.14: Good prognosis, at least 50% of cavity open.
    Repeat hysteroscopy scheduled with Dr. I on 6.16.14. Great progress. Unbenched!!!!
    Discussing actively TTC with DH after the heartache of the last year. We're both reeling.
