Alright, so how many of you are doing freezer meals? I have thought about it, but it has just been a thought. Should I be doing this? If so, you has some really easy recipes? I am not much of a cooker so I need easy and less ingredients the better, ha.

I did freezer meals and it's nice knowing that I've got some healthy, homemade food for when we get home. I know that DH is willing to take care of meals, but I'd end up eating take out, pizza and cereal all the time if I left it up to him. Now he can just be in charge of grabbing bags of salad and milk and everything else is taken care of.
I don't think it matters if you decide to do freezer meals or not, I just think it's smart to have some sort of plan for meals the first week. It might be friends or family, whatever works so you don't have to think about it.
I just did some comfort foods that I know freeze well, nothing fancy. Chili, mac & cheese, shepards pie, chicken pot pie, chicken tetrazini, enchiladas and meatballs. I did one recipe of each but divided them into 2-4 serving sizes so we don't have to eat the same thing over and over again.

My Chart / Info for Newbies
I've made a few. My mom has a huge kitchen so we were able to put together about 5 meals in one day! I made enchiladas, lasagna, beef wellingtons (not the real beef wellingtons, my mom made up the recipe and calls it that for some reason), black bean and rice burritos, marinara sauce and 4 pizza doughs. That should last us about 2 weeks which is all I think we'll really need. If you plan on doing it all at once definitely find a friend to help! And I just used disposable casserole dishes to avoid having to do more dishes.
GL! Let me know if you want any of my reicpes. I'm one of those "eyeball" cooks who doesn't ever measure when making my own recipe so it might be a little difficult but I'll do my best!

If you search the "soup" label on the left side, I made and froze all of the soups (Mexi-Turkey Chili, White Chicken Chili, Potato Leek and Ham, Split Pea and Ham, Lentil, and have ingredients for Creamy Tomato).
I also froze lasagna, shredded chicken, pizza dough, banana bread, and pumpkin-pecan bread (all on my blog).
I also stocked my freezer and pantry with items for quick meals (frozen veggies, snacks, stuff like that).
I did this and have about 30ish meals in our freezer.. Check out my blog I have the recipes I did on their own page (called.. Freezer meals) The slower cooker is great to use right now. Good luck!

So far I've made lasagna, baked ziti, chicken enchiladas, Chicken tortilla casserole, marinated pork loin, meatballs and chicken and sun-dried tomato stuffed shells. The first 4 are in good size casserole dishes so they will easily feed us for 2 dinners plus leftovers for DH to take for lunch or we can have them for dinner while my parents are still here, etc.
Still on my list of things to make is pizza dough, a few loaves of bread, some muffins for a quick breakfast/snack, maybe some bagels as well, and marinate some chicken and veggies for fajitas.
DH can't cook to save his life so I wanted to have plenty of stuff on hand for the first few weeks so that we dont have to live on frozen pizza or takeout.
While I dont have a "freezer" tag in my blog, there are lots of recipes - especially in the pasta section, chili, tortilla soup, etc that are easy and would freeze well. LIS.

We did freezer meals, but not on our own. We went to a place called dinner done that is traditionally for busy families. You go one night and they have all these delicious recipes to choose from. You pick how many meals you want to buy and the meals you want to make. You go in and prepare everything there and pack them up and bring them home. We went on a couples night, it was a lot of fun. You break the meals up into all different sized portions and so forth. I really recommend it. They also offered a stork package for pregnant moms who want freezer meals, but don't want to prepare them. They will make you what ever you want and you just pick it up. I recommend you find a place like this in your area.
