Eggs and cheese on toast. Just like it sounds - toast a slice of bread, top with a slide of cheese, and add an egg (we do scrambled). Serve open-faced. We're having it tonight because I'm trying to use our two dozen fresh eggs we were given this weekend. My kids love it.

Haha, we do the EXACT same thing...except we require chopped onion in there, too. We've done it without but really prefer to have them. This has been our go to since college...
If we are excluding meat, then I'd have to say pasta. I usually have frozen tortellin in the freezer that I will toss with tomato sauce or butter/garlic/cheese. I also like to keep the fixin's for pizza around. I like martha white's crust mix, but even the pillsbury refigerated dough isn't bad (and it is a little easier). I always have canned pizza sauce in the pantry and motzarelle in the frige. I usually add a meat, but a veggie pizza is also awesome.

This. Frozen pizza or potstickers (we get a big bag of them from Costco) are high up there too. Sometimes pancakes.
French toast and fruit. Or any breakfast for dinner.
Or tator tot casserole.
I haven't tried this one yet, but I just put it on my list for next week. Looks like it fits your criteria.
