If you did freezer foods before your EDD how much did you make? Like how many meals? What hints or tips do you have to pass on that you think would make it easier for us? Also - do you have any recipes or sites with ideas that you would like to pass along? Thanks!
Re: Freezer Foods
I'm pretty sure you have this one already:

I know Molly did a post in her blog about her freezer meals too.
I didn't with Owen and I definitely wish I would have.... will definitely be doing it with this one.
I saw this post on the what's cooking board:
https://joelens.blogspot.com/2007/01/freezer-friendlymake-ahead.html
I made either 1 or 2 8x8 pans of all of these:
baked ziti
pw lasagna
Mac and cheese
chicken enchiladas
I also made:
hamburger patties (we eat turkey)
taco meat ready to go
spaghetti sauce
This sounds like the perfect plan, but my freezer is literally the smallest freezer ever made. I have so little room! I think I will just have spaghetti sauce, chili, and maybe soup in jars in the freezer. No room for pans at all. I think my freezer is about 9 inches wide! LAME!
When I was pregnant with DD three years ago, there was a post going around the tri-board with lots of recipes. I still have the word document if you would like it. I can tell you what I've made too--I used to belong to a freezer meal club. Email me (Joy) at Bean1031 (at) gmail.com and I can forward you the file.
With DD, I found that we ate a lot of the freezer meals BEFORE she was born. Ha. It was nice to come home when I was very pregnant and already have dinner ready.
I did:
lasagna
pasta sauce
soups/stews
mac & cheese
some chicken dishes (chicken with broccoli/rice), stir fry
I just made a double batch (it made three pans) of Molly's enchiladas with ground chicken ... they freeze great.
Thanks for the link - I hadn't seen that. I did grab a few of Molly's ideas.
This site is amazing - I love how she tells you how to turn any recipe into a freezer meal! So nice!
I sent you an email - her enchiladas were one of the recipes I pulled off her site - it sounds great!
I did freezer foods. It was soooooo nice to have an easy hot meal. I also did chili, chicken and noodles, stuffed shells and cookies (just make the dough, ball it up and freeze. When it is frozen, take it off the cookie sheet and put in a bag or tin. Then, you can bake from frozen and it usually only takes a few extra minutes). For some reason, it was nice to know I could make a few cookies when I wanted instead of a whole batch.
Oh! I didn't do this but have in the past. You can also make and freeze mashed potatoes. Just portion out enough for a meal, freeze and then microwave. So, you have an easy side dish!
