NBR: What to do with thin sliced chicken breasts?

I took the wrong kind of chicken out of the freezer last night and now I don't know what to make for dinner.  I thought they were regular chicken breasts, and I was going to bake them, but they are thin sliced and I'm at a loss!  Maybe a stir fry?  I need some inspiration!
I don't know what's up with my siggy and I am too lazy to figure it out.

  • you could do a quick easy breading on them and have them on buns 

    stir fry

    sliced on top of salad

    roll them up with some bacon and stuff something inside (green beans, cheese, ham, etc)

  • Chicken Francaise.  It is yummy.

  • Chicken gyros.  Cut the chicken in strips, saute with a bit of olive oil, balsamic vinegar, garlic and onion powder.  Serve on warm pita (or if you don't have pita, you can use tortilla wraps) with onion, tomato, lettuce and tzaziki sauce (for the tzaziki sauce: peel and finely grate a small cucumber and mix that with a cup of Greek yogurt, a smidgen of dill, a splash of lemon juice and a pinch of garlic - super easy).  The whole meal takes about 20 minutes to prepare and is a favorite in my house :)

  • Chicken Parmesan: dip in egg, then in an mixture of Italian breadcrumbs and Parmesan cheese. I pan fry but you can bake them if you'd rather. Serve with pasta and pasta sauce.

  • I cook chicken with a club house spice, roasted peppers and garlic and add it to rotini pasta noodles with uncooked chopped peppers, frozen peas and shredded cheese.  It is a big hit at my house, even DD likes it.

    chinese food/stir fries are always good w/ the thin cut kind

    I have a rocco dispirito recipe that I love w/ thin cut chicken (and I often just use some of the frozen chopped basil from trader joe's when I don't have fresh on hand). 

    chicken w/ tomato & basil1/3 cup plus 2 tbsp olive oil1 1/2 lbs (i just buy one package or pound some chicken breasts thin) thin cut chicken cutlets7 large cloves garlic, chopped1 28 oz can san marzano whole peeled tomatoes, drained, 1/2 cup liquid reserved24 fresh basil leaves, torn into pieces

    heat 2 tbsp oil in saute pan over med low heat. season chicken w/ s/p and add to pan, oil should barely bubble. cook for 2 1/2 min then flip. meanwhile, heat remaining 1/3 cup OO in large saute pan (I actually only have 1 large saute pan so i do chicken first then this part) over medium high heat. add garlic and cook stirring frequently until lightly golden. add tomatoes & cook about 3 min stirring often. add reserved liquid & bring to simmer. season w/ s/pt and stir in basil leaves. pour sauce over chicken in pan & shake to coat, bring up heat to simmer. serve w/ pasta & parmesan/romano. 

  • Thanks for all the ideas, now I don't feel so lost!  I'm off to see if I have all the ingredients for Chicken Francaise, because that sounded delicious when I googled the recipe. :)  Otherwise, I think stir fry it is!
