Starting new 'diet' today.

So my DF went to the doctor and the doctor told him that he needs to quit drinking pop cold turkey, eat less salt, eat less bread and pasta and of course to eat healthier foods.

I am all for this, plus I still need to lose the 20 lbs from the baby weight I have. So we are doing this together.

Just wondering healthy recipes you can make with chicken?

  • Two super easy healthy ways to cook chicken that I like...

     

    Salsa chicken: just top chicken with fresh salsa before baking. Comes out of the oven super moist and tasty!

    Diet Coke Chicken: Makes a super tasty BBQ sauce!

    4 skinless, boneless chicken breasts
    1 cup catsup
    1 can Diet Coke (other diet sodas work well too!)

    Put chicken in a non-stick skillet. Pour catsup and diet soda over the chicken. Turn heat to medium-high and cook chicken for 45 minutes, stirring occasionally.

    Cover, reduce heat to simmer and cook another 15-20 minutes. Remove lid, and cook until sauce thickens and sticks to chicken. Sauce will taste like BBQ and the chicken is very tender.

    I make one like this with the salsa but sprinkle some low fat shredded cheese on top after the chicken is cooked, top with salsa---yum.

  • Salsa is practically calorie free and SUPER flavorful.  Get creative with it :)

    Another great recipe is to marinade chicken in Zesty Italian dressing and then put it in the grill or bake it.  You can even cook it in a skillet by adding extra dressing for it to cook in.

    I have actually marinated chicken in Italian dressing, grilled it and then used that as a base for other dishes like Chicken Parmesan (not breaded!)
    All I do for that is marinate, grill and cook the chicken thouroughly then put in baking dish, cover with slice of mozzarella or provolone on each piece of chicken then add a jar of your favorite marinara sauce and sprinkle some fresh basil over the whole dish.  Bake at 350 until the cheese is melted, starting to brown.  So good! 

    I personally don't believe chicken should be breaded so I love chicken parm like this! :)
