Please share your 'stuffed peppers' recipe with me.

I'm looking for new things to cook.  Please share your recipe with me.  Let's see...I know I'll need peppers...what else? Wink

    Stuffed peppers,

    in the slow-cooker

    In this recipe, the slow-cooker really allows the flavors in the filling to meld. Assemble the

    peppers the night before and refrigerate; place them in the slow-cooker on the way out the door

    the next morning. Dinner's ready when you are.

    SLOW-COOKER ITALIAN STUFFED PEPPERS

    pound ground beef

    1 cup uncooked white rice

    8 ounces mozzarella cheese, cut into '/4-inch cubes

    1 small onion, diced

    1 teaspoon salt

    1/2 teaspoon pepper

    1 teaspoon parsley, minced

    2 garlic cloves, minced

    6 large red peppers, tops cut off and hollowed out

    1 (32-ounce) can crushed tomatoes

    1  1/2 cups beef broth

    1/2 cup parmesan cheese, grated

     

    Mix together the first 8 ingredients in a bowl. Spoon mixture into peppers, filling about 3/4

    way; discard pepper tops. Place stuffed peppers into 5-quart slow-cooker. Pour crushed tomatoes

    over peppers, then pour beef broth around the sides. Cover and cook on Low for 6 to 8 hours?

    top with parmesan cheese before serving. Serves 6.

  • I have tried this recipe and made it more like a stew. I put in enough uncooked rice to soak up the liquid. It smelled and tasted just like stuffed peppers. I am not a fan of the large pepper so I liked this.

  • I just made the best ever stuffed peppers last week- I might have to make them again b/c they were so good.

    I used a little over a lb of turkey burger, cooked it up w/ chopped onion. Then I cooked 1c each of quinoa and brown rice. Once cooked, I mixed these in w/ the meat, and added a large can of diced tomatoes, added salt and pepper to taste. I stuffed 6 peppers w/ this mixture, put them in my large enamal cast iron pot, and then poured a large jar veggie juice all over them.
