Anti-constipation Muffins

Hey all, I know a lot of us are struggling with constipation right now, and I thought I'd give you my bran muffin recipe! (I'm not a fan of bran cereal, but the muffins are delicious! And they obviously help with fiber..)

You need a huge bowl for it because it makes a ton. You just keep the extra mix in the fridge and bake as you need. The mix lasts for about 2 weeks in the fridge, but mine is always used up by then.

Anywho...

Refrigerator Bran Muffins

Ingredients:
mix and let cool: (I usually mix and stick these in the fridge while I mix the next set of ingredients)
2c. boiling water
2c. Kellogg's All Bran
2c. Nabisco 100% Bran
1c. shortening

in separate bowl combine:
3c. sugar
5 tsp baking soda
5c. flour
1 tsp salt
add: 4 eggs
1 quart buttermilk
mix all together until smooth

Directions:
add cooled ingredients of first bowl. Refrigerate.
 
Bake at 400, 18 minutes

(if you can't find both kinds of bran, just use 4c. of one)
