The restaurant we ate at tonight serves banana bread and apple butter and DH loves it. So I decided I will learn to make it, even though I am not a cook at all. I found a recipe for apple butter in the crockpot, which is about my level. But it seems like it will make a lot. Do you think I could freeze it in individual servings somehow?

I agree, ice cube trays are great for freezing individual servings of a variety of things.
If it doesn't work out though, I know the Cracker Barrel Restaurant/Store sells jars of Apple Butter
