I use this one as the base, and then I make a couple of changes. I cook it in a crockpot - I totally skip the whole bit where you pre-cook the onion and spices, just dump it all in the pot and cook it on the lowest setting all day while I'm at work.
I add an extra can of kidney beans, and because I'm slow cooking it, I also add some chicken stock - somewhere between 3/4 to a whole can (since I have to rinse out the bean cans to recycle them, I use one as a measure while I'm at it - I think it's roughly a cup of water?).
I often increase the spices a bit, but that's just because I like my food fairly strongly flavored.
It's really good with a dollop of plain unsweetened yogurt on top before serving and is good over rice (although I've also just eaten it in a bowl with some naan on the side).

No worries! LOL I took one look at the recipe when I first used it and went, "Eh...too much effort. I'll try it in the crockpot instead." And I was really surprised at how well it worked!
I'm starting to think we may have to have this for dinner sometime this week...
