We are working on getting some things done around the house this week, so we have several easy things planned.
A Stouffer's lasagna, BLTs and fries, broiled italian sausages with rice, greek chicken rollups. Who knows what day we will actually eat what. It will just depend.
You're so sweet None of them are my own recipes, but I'll post the enchiladas when I make them because I know they're good...lately I've been *stealing* from my Campbell's Kitchen Cookbook...I'd be a an eager volunteer for their test kitchen!

Tonight we had chicken spaghetti from the freezer party I had a while back. This week, we will also be having baked jambalaya (also from the party). I REALLY need to get back into the swing of it. I am going to start making lighter/healthier meals. I made a great one from Cooking Light the other day...Roast Chicken with Balsamic Bell Peppers...yum-o!

Ok! - I tried (for a free meal)! I mention (to hubby) that we might; just be invited for some what sounded like home made 'Chicken Stew' with a couple Thursday evening! Sure sounds good! Would it be possible you're posting the recipe on here. TIA (Wilma)
