Help - Crock Pot Pot Roast!

So DH and I are getting married this coming weekend...well, kinda.  We were married outside the (Catholic) church.  DH is Catholic - I don't really consider myself Catholic, but I agreed to raise Delaney Catholic.  DH can't take communion since we got married outside the church - so to rectify that, we are having a little ceremony Saturday to bless our marriage, etc.  Then he'll be legit.  

Aaaanywaaay....we'll be having company this weekend to celebrate.  I'm not much of a cook and won't have a lot of time since the ceremony is at 4:30pm and then mass is at 5pm.  I thought a crock pot roast would be perfect - easy to throw together and then let it cook while we're out.  Anyone have a yummy recipie to share?  And what is the best kind of roast to use for the crock pot?

  • Just made pot roast tonight, altho not in the crock pot.  I followed the America's Test Kitchen cookbook recipe and it was yummy.   And you have it in the oven for 4 hours, so it's "almost" like a crock pot and might work for you.

    Here's the quickie version: 

    Salt & pepper the meat generously and sear it in oil in a pot that'll work on both the stovetop and in the oven.   Put it aside and saute an onion, some carrots and a couple of ribs of celery in the drippings.  Add some garlic, 2 cups of beef broth (they used 1 c of beef and 1 c chicken.. I didn't have chicken) and some thyme and put the meat back in the pot.  Add water so that it comes up to halfway up the side of the meat.  Cover tightly with foil and then put the cover on the pot and bake at 300 for 3 1/2 to 4 hours.    You're also supposed to flip the meat every 1/2 hour, but you could probably skip that if you're out of the house for a while.

  • I don't have a particular recipe, but I do roasts in my crock pot all the time.  I like pork roasts better than beef - they seem to come out more tender to me.  I usually either pour beef broth over it or else I use a bottled marinade such as sesame ginger or teriyaki and pour that on the roast, then turn it on for 8 or 10 hours, depending on when I want to eat that night.  It isn't fancy but it always tastes great.  If you want to go a little fancier, you could probably find a great marinade recipe to use on it.  Crock pots are the best!

  • I make crock pot roast often and always follow the same recipe. I've used chuck, english, rump. The more fatty the roast the more it will fall apart, so if you want you roast to stay intact while cooking get a roast that doesn't contain as much fat. Chuck seems to be the kind that falls apart the most, but it has great flavor.

    Start with a packet of onion soup mix in the bottom of the crockpot. I always mix in a little water - maybe 1/2 cup. Then put the roast in and top it with a can of cream of mushroom soup. Spread it all over the roast. 

    I normally put my roast on about 7:30 am before I go to work and let it cook on low all day. Delicious!

    I do the same thing but then add veggies on top such as carrots, celery, onions, potatoes, cabbage, parsnips and cook them all together with the roast.

  • I do something similar to ATK and Pioneer Woman's recipe.  I tend to get a leaner cut than the regular pot roast.  Generously salt (kosher) and pepper the slab of meat on all sides.  Take a dutch oven and heat some oil in it.  When hot, add the roast and sear on each side, about 2 minutes each side.  Remove.  Then you want to add in a whole onion, quartered (I prefer this so I can pick out the onion afterwards), 3 carrots sliced thick (I leave the skins on a la PW).  I also use baby Yukon gold potatoes and cut those in half and throw those in.  Let cook for a few minutes then turn.  You see brown stuff on it like it's searing, perfecto.  Then remove the veggies after searing on the other side.  Throw into the pot some red wine and beef broth to deglaze it along with some fresh chopped rosemary, a sprinkle of herbs de provence, little thyme (PW has mad love for thyme and I don't) -- basically season as you would prefer.  Then layer in the crockpot -- meat, carrots and potatoes, onions, some ribs of celery and pour the liquid over all that.  Cook on low for 5-8 hours depending on the size of the roast.  You can also do mashed potatoes on the side instead of in the crockpot.  When you get done, pull out the veggies and meat and cover with foil to keep warm.  I pour the liquid back into the dutch over and add some corn starch to thicken it up for gravy (sometimes I add some more broth, better than bullion beef, dash of worcestershire, wine and/or kitchen bouquet depending on what it seems like it needs).

  • We also got married outside the Catholic church and then had a small Catholic wedding because my annulment finally went through! I was married 15 years ago and it only lasted a year. Congrats by the way!

    I like my roast beef simple. I just add water to onion soup mix and put in crock pot and add the beef. I put it on the 8 hour setting. It is scrumptious!
