I think it was here that I saw a post about needing a weekly menu plan or WFDT post...I'll kick it off.
Tonight - Thai peanut chicken skewers with lettuce and carrot salad and spaghetti in peanut sauce.
Monday - Butternut squash ravioli bake with green beens
Tuesday - Pork tenderloin with apple sauce and asparagus
Wednesday - Chicken alfredo with mushrooms and broccoli
Thursday - leftovers
Friday - Eggplant Parmesan with mushrooms
Breakfast is yogurt with granola and blueberries or eggs and homemade sausages with oranges
Lunches are leftovers or black bean burgers with apples, oranges, or cherries.
Re: Weekly Menu
What is this for? Is it an idea exchange kind of thing?
I do two weeks worth of menus. It really saves us money planning everything and having the menu up on the fridge stops dh and dd from asking "what's for dinner"

I've done so much better with cooking at home, and eating my vegetables since I started my weekly menu. And I love getting ideas from others, so this is great.
Here's my week:
Tonight we're eating over at a friend's, I'm bringing dessert: apple pear crisp.
Monday: Cassoulet (I don't actually know what cassoulet is, the recipe looked good though. It seems to be a stew of some sort). And since I have the day off, I may try my hand at baking bread.
Tuesday: linguine with clams, salad
Wednesday: pork in the slow cooker with rice
Thursday: enchiladas with beans and rice
Friday: I usually only plan for 4 days, because inevitably something comes up which prevents me from cooking as planned. Thus Friday is always my buffer day.
Saturday: out with friends for Mexican (now realize I should probably rethink the timing of the enchiladas)

I love menu ideas - I haven't been cooking nearly as much as I should be either!!
Tonight - Hmm...it was more of anything goes night - we went grocery shopping and I made a large salad at the salad bar and got a cup of soup. DH got wings.
I am off tomorrow - so I am cooking 3 things and we will have them throughout the week.
#1 - I am making a roast with potatoes, carrots and mushrooms (I use onion soup mix as my seasoning, put it in an oven bag and roast)
# 2 - I am making a double batch of chili.
# 3 - And a big batch of Hungarian goulash (stew meat, onions, potatoes, canned tomatoes, salt, pepper, paprika and water).
All yummy comfort foods for what is supposed to be a very cold week. It will also be a busy week for me, so if I want home cooked food, I need to make a bunch of things tomorrow.
Friday - we usually get pizza
Saturday - not sure
Sunday - something football party friendly - the Steelers are playing at 6:30 pm!!!
Breakfasts - I am bad, usually just coffee. I know I need to start eating breakfast, but I leave for work at 6:40 am and that is just too early for food. Mid morning I have been eating a hand full of almonds.
Lunch - I normally take a frozen meal - I have been buying gluten free ones, but I am not totally gluten free, just cutting back. I found a 3 bean chili that is very good and some of the Amy's Kitchen mexican meals are good too. I also like that they are in paper type containers instead of plastic. I eat some fruit too, right now I am into clementine's.
I buy the ingredients for four meals and post a list on our fridge. My husband picks one thing off the list per day and that's what we have for dinner. This allows us one night during the week to eat out. Our joint New Year's Resolution was to only eat out for a special occasion or with other people. We were shocked at how much "What's for dinner? I don't know. Wanna go grab something?" eating out we were doing. Not even good stuff.
Here are my meals for the week:
Sunday--homemade chicken alfredo (made with as many reduced calorie substitutions as possible--no butter, 1% milk)
Weekday Meal 1-chicken and brown rice casserole
Weekday Meal 2-Steak and baked potatoes
Weekday Meal 3-Pork chops and green beans
Weekday Meal 4--Panera soup from Sam's with sandwiches
This is a great idea! I hate cooking and I am trying to get better at planning meals. DH works nights so I try to have things ready for him before he leaves for work. Trying to use the crock pot more. Here are my plans for this week:
Tonight: leftovers
Monday: stuffed shell casserole
Tuesday: Orange glazed balsamic chicken
Wednesday: Chicken and gnocchi soup
Thursday: chili
Friday: pizza night
Saturday: dinner at in-laws
Breakfast: cereal bar or oatmeal cookie
Lunches: usually soup, salad or leftovers
Now let's see if I can actually stick to it!
M - Chicken ramen soup
T - chicken parm skillet and cesar salad
W - Chicken souvlaki, hummus and pita
R - steak, baked potato, broccoli and mushroom
F - black bean and salsa soup
S - pulled pork (and side?)
S - Baked pesto pasta
Dx: PCOS and MFI

I loved pulled pork!
The hard part really is sticking with it isn't it ladies? We are pretty good about it, but occassionally I just think, "I've been so good...can't we go out this week?!" But if I already have the stuff prepped in the fridge then we are more likely to eat in. Last week was a total failure though...I ordered pizza one night and then my mother really wanted us to go out with her, she did insist in paying though, so I guess that didn't really mess up the plan
