I rarely make lasagna. I've probably only attempted it twice in my lifetime. LOL. For some reason, I just haven't thought to make it. However, my DH loves it and my parents are coming this weekend to visit so I figured lasagna was a good make ahead dish I could pop in the oven while they're here.
Instead of just picking an allrecipes selection like I normally do, I was hoping I could get some good "tried and true" lasagna from you ladies? TIA!

I used regular sausage instead of hot because of Ben and it was still great. Oh, and I left out the tsp of salt in the cheese mixture b/c one of the comments said it was too salty and I have to say that it was a wise move. It was plenty salted enough without that extra tsp.
Ditto AngelPack--I'd never made lasagna before, and have made this one several times in the past couple of months. It was very easy, and was delicious! We had it on Christmas Day.
I did use just a lb of ground beef + a 1lb of hot sausage once, and it was too spicy for me (for lasagna anyway). The next time, I used a lb of ground beef & half a lb of hot sausage. It wasn't too hot at all made that way--just had a nice flavorful kick to it. That was plenty of meat for us--every time I've made it, I've had meat sauce & noodles left over. So you can adjust it based on your pan size.
I use this one - super basic but delicious! Usually, I use ricotta instead of cottage cheese.

I had NEVER made lasagna before....and when I was making some freezer meals for my mom when she had surgery my dad requested lasagna. I made this and it was awesome. I'm not sure where I found it, but it's good! I was skeptical about the mushrooms, but they are yummy in it. It makes about 4-5 servings
3/4 pound lean ground beef 3/4 onion, chopped 3/4 (4.5 ounce) can mushrooms, drained 3/4 (28 ounce) jar spaghetti sauce 3/4 (16 ounce) package cottage cheese 1-1/2 cups part-skim ricotta cheese 3 tablespoons grated Parmesan cheese 1-1/2 eggs 3/4 (16 ounce) package lasagna noodles (they don't have to be the precooked kind) 6 ounces shredded mozzarella cheese DirectionsThis recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 8 servings.
In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
Bake in a preheated 350 degree F (175 degree C) oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.
