There are a millions of chili recipes out there. So many, in fact, that I couldn't pick just one. Instead, I pulled from multiple and made up my own basic recipe. Feel free to modify as you like, using the variations I suggest below, or by creating your own version.
In a large skillet, or a large stock pot, brown ground beef and garlic over medium heat. Drain and crumble. Season with salt and pepper
(If using a crock pot, transfer beef and garlic to crock pot at this time.)
In a large pot over medium-high heat, combine ground beef, garlic, onion and green pepper. Add in remaining ingredients, and allow to simmer for at least 1-1/2 hours, stirring occasionally.
In a crock pot, cook on low for 8 hours. The longer it simmers, the better it tastes, which is why using your crock pot is a good option.
Serve with shredded cheddar and sour cream.
Easy Variations: Substitute ground pork/turkey/chicken for half (or all) of the ground beef; stir in a tablespoon of hot sauce; use black beans in place of one of the types suggested above; add a can of diced green chiles; stir in a bottle of your favorite beer, etc.
Mine is super easy and delicious, however it doesn't involve a slow cooker.

1 can of diced tomatoes, 1 packet of chili seasoning, 1 can of chili with no beans, 1 can of chili beans, 1 cup of elbow macaroni, 1 can of tomato sauce, 1 lb of lean ground beef.

The best part of all is you can play around with it a bit, and make it as spicy or mild as you want. I usually make a homemade cornbread to go with it. I've gotten a lot of compliments on this chili.

Ingredients
2 pounds ground beef
1/2 onion, chopped
1 teaspoon ground black pepper
1/2 teaspoon garlic salt
2 1/2 cups tomato sauce
1 (8 ounce) jar salsa
4 tablespoons chili seasoning mix
1 (15 ounce) can light red kidney beans
1 (15 ounce) can dark red kidney beans
Directions
In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.
Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

3 lb. ground beef

1-1.5 lb ground beef (my DH likes lots of meat so I use 1.5 lbs)

1 cup coke (real - not diet)
1 tbls chili powder
1 tbls cocoa
1 tsp garlic salt
1 tsp onion powder
1 tsp ground cumin
1 tsp salt
1 tsp pepper
1 tsp crushed red pepper flakes (optional - use as much as desired for extra heat)
Brown beef in large stock pot. DO NOT DRAIN! Add all other ingredients. Simmer on medium for 20-30 minutes. Serve with shredded cheese & crackers.
