I read we can't have Mexican cheese dip, because it might be unpasteruized. I thought that was illegal in the U.S. plus it's cooked! Can we not have it? I REALLY WANT SOME! Thanks.

You can eat almost any cheese. I eat goat's cheese, which is a 'soft cheese', I just make sure its pasturized. Almost anything you buy in a grocery store in the US is pasturized.

Mexican queso dip is made with american pepper jack cheese, which can barely even be considered food. It's pastuerized. Eat the damn cheese.
FTR I've eaten it about 455,672 times in the last four months, and while my waistline may not be appreciative, my non-listeria stricken stomach has thoroughly enjoyed every bite.
Wow. It really depends on your queso! REAL Mexican and border queso IS in fact made with queso blanco, and is a soft cheese that if imported from Mexico could be unpasteurized. REAL queso is never made with velveeta or any flavor of "american" cheese. Gross.
Queso in a jar is about as good as cheese whiz or dip they put on nachos in stadiums. Equally gross. However, if you are craving queso and need to avoid the "real" queso because of the unpasteurized cheese, the Velveeta PASTEURIZED cheese product is a tolerable substitute.

Olive - I'm not going to lie.. Chuy's queso compuesto AND the queso at maudie's (with meat) are my favorites. Those are probably closer to 'fake' queso though, right?

Just make a makeshift queso: velveeta and rotel mix. I used to work at OTB, they used LOL unsliced american, tomatoes, jalapenos, and spices.
