I love Fix It and Forget It book. Pepsi Pot Roast is one of my favorite recipes from the book. Here's the recipe:
Pepsi Pot Roast (Original Recipe)
3 - 4 lb - Roast
10 3/4 oz can of Cream of Mushroom Soup
1 envelope of dry onion soup mix
16 oz of Pepsi Cola
Place the roast in the crock pot.
Top the roast with the cream of mushroom soup and dry onion soup mix. Then pour the Pepsi over the meat.
Cover and cook on high for 6 hours.
OMG...it is to die for! Tender, tasty, and super easy to make. BTW, we changed the recipe a bit and we love it this way too. We don't add the cream of mushroom soup. Instead, we put fresh mushrooms (slice or whole - regular, shitake, or baby portabella mushrooms) and in the last hour we add a cup of cream (light or heavy).
1 cup (or a little more - I did a 12oz bottle yesterday) Frank's Red Hot sauce
1 pkg dry Ranch Dressing
Cook on high 3-4 hours, until chicken is done, shred chicken and stir with the sauce before serving. We like it as sandwiches, on quesadillas or pizza.

my favorite one right now is crock pot chicken pot pie.
4 chicken breasts
1 family size can of cream of chicken
1 reg. size cream of potatoe
bag of frozen mixed veggies
5 diced potatoes
put it all in the crock pot and cook for 4-6 hours and then serve with warm bisquits.
Chicken breast combined with
chopped green peppers and onions
jar of salsa
can of black beans and corn
The chicken will shredded apart after cooking for the day.
Serve like tacos/fajitas on tortilla shells with cheese, sour cream, lettuce, and tomato.

A little late but I will post this anyways:
Angel Hair Chicken
3-4 frozen chicken breasks
1 cup chicken broth
1 bag frozen broccoli
2 can cream of mushroom soup
1 pack Italian Dressing Mix
1 brick of Cream Cheese
2 T chives
2 T Minced Onion
Throw all of the above in the crockpot on low and let cook all day. Once cooked stir up (Chicken should shred easily) serve with Angel Hair Spaghetti.
