My DH came home last night and requested that we have stuffed cornish hens for dinner. Well, first of all, I am not exactly what you would call a cook, I can cook, I just don't. Second of all, I have never even eaten cornish hens, let alone cooked them. And, to top it all off, I have a horrible chest cold that Dayquil is only half a$$ helping with. He has told me not to worry about it, and that he will just make them some other time (insert sigh and puppy dog eyes) , but now I really want to make them to surprise him. Anyone have any ideas for good side dishes? Croissants? asparagus?
Hope you feel better soon! Cornish hens are really easy to cook - just put them on a cookie sheet and bake them. Super easy. We usually do "thanksgiving" side dishes with ours... stuffing, mashed potatoes, green beans, etc. Good luck!
