What is everyone using as far as baby shampoo/lotion, etc.? I thought I saw someone write that Johnson & Johnson should be avoided- anyone know why?

We use California Baby. J&J stuff generally has lots of chemicals.

J&J is no better or worse than any other conventional products (which are pretty shockingly chemical-laden).There also is a ton of "green washing" where companies package their products as natural, but really are just marginally better. This database is very eye-opening and is a great source to work from.
For LO, we will use the same things that we have already carefully selected for ourselves: Dr. Bronner's Baby Castille Liquid Soap in a 1:10 ratio with water in a foaming soap dispenser (my preference) and/or Aveeno Oatmeal Soap bar (the only soap that DH is not allergic to). We are not using a specific shampoo, just the soaps.

That being said, I use J&J shampoo, Aveeno body wash and J&J lotion. No problems with dryness and rashes. Every baby is different.

Every baby is different and some will have more sensitive skin than others just like adults. When you think about it, you would hope your baby can use J&J or other regular products because that means they have a better skin tolerance and are not so sensitive to things. This will also be good when it comes to cost. Another good thing to do is mix and match like PP. For example you may use J&J shampoo, Aveno wash, and baby magic lotion...who knows.
I also agree with PP that I tend to think that it's not what you start off with but what you end up with. I have received Aveeno, J&J, and Baby Magic bath sets. I plan to use them all because this is our 1st and I have no idea what will work. So I will just have to find out. Hopefully they all work just fine. What I do know for sure though is I will be using 100% Shea butter (straight from the shea nut) after all baths no matter what product I start out with. I think it is important to moisturize/massage your LO's skin with a good natural product.
