healthy mexican crock pot recipes?

I am cooking for NYE and want to make something mexican in the crock pot..i found a recipe for chicken fajitas..but was wondering if anyone has something easy and yummy to share. thanks!!

It's not really a recipe, but I toss a few chicken breasts in the crock-pot, season then with a little taco seasoning and cover with salsa. I cook until the breasts are tender enough to shred and I serve it as a taco or burrito filler. Yum!
