Every single morning for the past few weeks I wake up feeling like my throat is swelling shut. I have really bad food allergies and it's a lot like the feeling I get if I eat something I'm allergic to, just without the itchy throat.
Is anyone else experiencing this or maybe have a clue what it's from?

Not sure if it's the same thing, but I've been waking up with a sore throat, swollen nasal passages, and a really dry mouth. For me I think it's a combination of really dry air in my house (we heat our house with a wood stove) and weird pregnancy swelling.
I have read that when you lie down, all of the fluids that tend to accumulate in your lower body will redistribute throughout the night, so maybe that's why your throat is swelling? Maybe try propping your head up with more pillows and see if that helps. Also, if it's the dry air causing it, maybe a humidifier would help?
With the cold weather and the heat on through the night I was going through the same thing. I got a humidifier and it has been a lifesaver. It makes a world of difference and I'm only sorry I waited so long to give it a try!
