I don't worry too much about it as long as DS eats beans, eggs, and other sources of protien. Sometimes I can hide turkey in a grilled cheese or bits of meatloaf in mashed potatoes. Today it was turkey in a sandwich with brie and cranberry sauce. It also helps to let him use a toddler fork.

Well you could sneak it in things: ground beef in your pasta sauce, soup or something made with chicken broth. Or you could just make sure he's eating proteins and vitamins from other sources. Try offering tofu, beans/lentils, eggs, dairy to subsitute for meat.

I just keep offering it. Sometimes he'll take it, more often he won't, So I'll usually put a super small bite of meat with other stuff...noodles or veggies.
I don't eat meat either. He is starting to have food preferences. Give him what he likes and if you dead set on him being a meat eater, just keep offering it.
Oh, wait, that's intentional. Sigh. It won't kill your kid to not eat dead animals for a while. Feed him beans, nuts, tofu, the million other sources or iron and protein out there. I promise, he'll survive just fine without the fat and cholesterol he's depriving himself of right now.

i guess i dont see anything bad about not eating meat yet. its not really good for you - and the healthier kinds (free range, grass-fed, organic, etc) are expensive.
my DD doesnt eat meat but she will eat tuna salad and chicken salad. but mostly i just feed her other protein sources...she drinks milk so its not like she needs a ton more...she likes veggie burgers, cheese, cottage cheese, yogurt and sunflower seed or peanut butters and beans. there is also some protein in whole grains and even protein in vegetables. while its not a ton, it does add up during the day.
