I just spent the past twenty mintues having a bit of a hissy fit on the floor of my kitchen. I spent all morning making 50+ chocolate crepes for a chocolate mint crepe cake and as I am almost done icing and stacking it I step back to look at it and make sure it is straight, the freaking thing is weeping! The bottom half has liquid just dripping out of the layers. I had no clue why this would be happening. So I call my aunt (who is a science/baking genius), apparently I over beat the buttercream and seperated the fat solids in the heavy cream and now it is leaking. If I would have noticed it earlier I may have been able to save it, but now i either have to start all over including making new crepes, or just trash it and say everyone had better be happy with the cookies and cupcakes I made.

It was for tonight for the adults in my family, and the cookies/cupcakes were for the kids.
I have actually made this cake 3 times before, the only complicated/time consuming part is making the crepes. The part that is funny is I make this buttercream constantly, it is my go to recipe that I have memorized backwards and forwards. I just over beat it because I was trying to make it extra smooth for icing purposes.
I've never even made crepes! You might have enough time to remake it, do you have enough ingredients left? It sounds delicious!!!
