Babies: 0 - 3 Months

DH was out of town for work last night and I kept CJ with me so I could love on her since Daddy was gone.  He came home this afternoon, showered and left for a basketball game so I put the baby down around 8 and then I made... peppermint bark!!!  It's my signature Christmas treat and people have been hoping for it but not expecting much from me this year. 

Unfortunately, I won't see the person who really wanted it because her son has strep and she won't be at work tomorrow Sad

  • It's soooo easy!!  Line a jelly roll pan with wax paper

    Melt a bag of dark chocolate in a double boiler (or a metal bowl over a pan of boiling water - make sure the water doesn't touch the bowl) with 1 tsp of oil and 1/2-1 tsp peppermint extract.

    Spread it on the wax paper and stick it in the freezer for about 10-15 minutes.

    Melt a bag and a half of white chocolate in the double boiler - or the microwave in 30 second increments - with 1 tsp oil.  I also added some fat free 1/2 & 1/2 and whisked it because it was too hot and had clumped. 

    Spread the white chocolate over the dark chocolate and press smashed candy canes into the top.  Pop it back in the freezer for another 10-15.  Pop it out and break it into pieces.
