I'm too lazy to click on the other links so I'll just post mine here (I'm also a lazy cook so this is damn easy):
1 giant bag of frozen hashbrown potatoes thawed (I prefer publix to oreida, etc), 16 ounce of sour cream, 2 cups of shredded cheddar cheese, 1/2 cup finely chopped onion, 1 can cream of chicken soup, and one bag of pre-diced ham. mix it all together, sprinkle some extra cheddar cheese on top, cover and make in the oven at 350 for an hour! yum!

This is very similar to a hashbrown casserole that I am somewhat famous for in my circle of friends
SO yummy, makes my mouth water just thinking about it!!!
For mine, substitute a bottle of ranch dressing for the chix soup, and half the time I leave out the onion & ham. I also like to add some tabasco and garlic powder. DROOL
THis doesn't exactly cover eggless...but damn its good. We stayed at this B&B on our honeymoon and fell in love with the recipe there. I have made it several times and lately, just skip making the sauce and use maple syrup.
This one is also eggless, super easy and super yummmy!
Layer a can of crescent rolls, top with browned sausage, shredded hashbrowns and shredded cheese, top with another later of crescent rolls and bake til brown.
Re: Breakfast Casserole ???
I make a version of that but usually add a little milk or cream to make it fluffier. Chives are also a nice touch.
