Lots of practice! Also, I don't turn the lever all of the way. You want enough pressure to clean but not too much or it sprays everywhere. I usually fold the diaper, hold it really low in the bowl and spray downwards. Then I refold to expose a different section of the diaper. PFs are really difficult to spray clean. We usually accumulate a days worth (so usually about 2 poopy diapers) and spray them at night. That way, I only have to clean up the overspray mess once a day.
Even though spraying is messy and gross, I can't live without it.

part of what sucks for me is we have one of those old toilets with a ridic amt of water in the bowl so the diaper winds up in the water shich shouldn't matter but i try to avoid it anyway, but the point being, i don't have as much 'bowl space to work with to prevent overspray.
I just hate that the pail is in his room... and I have to put them in a little bucket thingy (the pink buckets from the hospital... we have like a billion of them) to carry them in there so I don't drip poop water on the carpet.

yes!! i'm having the same issue - but i know what pink bucket you mean and have one from my birth, that's a good idea!
