I'm looking for something yummy to make for breakfast Christmas morning. Egg and pork free if possible. Anyone have any favorites they want to share? It would be great if it's something I could assemble the day before.
Egg free puts some of my favorites out of the running. What about cinnamon rolls? I made the Pioneer Woman ones last year and they are tasty. I didn't do her glaze though, just a regular old glaze worked great.
We always do cinnamon rolls for breakfast on anyone's birthday, so we do them for Jesus' birthday too However, the day after Christmas, we have a brunch with my OOT relatives and I make french toast casserole. It requires egg but you could definitely use egg substitute and never know the difference, and you could and should make it the day before.
However, I don't make the praline topping. I use a combination of maple syrup and raspberry sauce. I have also used cinnamon swirl bread instead of french bread for the recipe. There are TONS of good french toast casserole recipes, so you could google and find something with ingredients you like best.

Oh! Forgot to say that I also like to put cream cheese in mine... maple walnut cream cheese is yummy... clearly this recipe is just a method and you can experiment with it
