Can you ladies help me out with ideas please? She's a meat eater but will do some veg. I'm at a loss for good meal ideas especially lunch and dinner. She doesn't eat fish and I refuse to touch pork. I'm making chili tonight and we're having pasta salad.

Stir fry, vegetable beef soup, baked mac-n-cheese, sloppy joes (you can use this recipe with beef instead of tempeh), red soup (which is really just 1/2 tomato soup, 1/2 vegetable stock & shell pasta - sounds stupid, but it's yummy). Those are all generally hits with my carnivore inlaws.
DH can't have red meat anymore (doc's orders), and he's a huge meat eater. This week we had chicken once and fish once, otherwise all veggie. If it's hearty enough, he doesn't complain.
The biggest hit was Giada's butternut squash lasagna--I got the recipe on foodtv.com (and left out the cookies called for--squash is sweet enough!).
Enchiladas are a good idea, too.
Italian soup with chicken italian sausage as the base with white beans, canned tomatos, kale, chicken or veggie broth, and some pasta or rice if you want and any other veggies you have on hand. Serve with some french bread/garlic bread/cheesy bread. Reheats really well.
Pot roast with TONS of carrots and other root veggies, make any leftover meat shredded up into a stew with more veggies.
