I need meal ideas

Please :)  I'm sick, and feel like I'm just barely surviving DDs growth spurt and chasing after a 2YO today.

I need something easy, but not 'boring' for lunch, dinner, and dinner tomorrow... We're totally bored of our freezer meals (we have stew, carrot/ginger soup, and chili left) so trying to keep it down to one of them a week and we've already dipped into it twice this week :s

ideas?  (apart from telling DH it's his night to cook dinner that is Wink)

  • I haven't been in the mood to cook lately either. :(

    A couple nights ago I warmed a brie in the oven with strawberry preserves, served with pita crackers.  We also had a salad and hummas with tomatoes and olives.  Sometimes I like doing easy tapas type stuff because its very little prep or cooking.  Not very seasonal or festive, but not all meals need to be heavy and hearty

  • I find eggs are super easy for lunch (eggs with some meat, cheese, and veg).  I'm with you though, I've been eating hummus and pretzels for lunch while i nurse.  Couldn't imagine doing it with a 2yo!

  • Pasta (so versatile!), a rotisserie chicken from the store w/ egg noodles and veggies, veggie burgers (the frozen ones...) with avocado and tomato, mac 'n cheese (homemade, but not baked)...
