Christmas cookie poll

I think this year it's only going to be feasible for me to make one type of Christmas cookie. And I am completely stuck.

If you could have just one holiday cookie, what kind would it be? (Recipes are appreciated, too!)

  • Spritz...then you can make all different styles and colors and decorate them different so it looks like you've made many different types.

    2 1/4 Cups flour

    1/4 teaspoon salt

    1/4 teaspoon cinnamon

    1 Cup margarine or butter

    1 Cup granulated sugar

    1 egg yolk

    1 teaspoon vanilla

    1 teaspoon grated orange rind

     

    Sift together flour, salt, and cinnamon, set aside

     

    Cream together margarine and cream cheese

     

    Add sugar and beat until very creamy.

     

    Beat in egg yolk, vanilla, and orange rind

     

    Mix in flour, salt, and cinnamon mixture

     

    Add coloring if desired

     

    You often need to refrigerate the mixture for a while to harden to a point where you can insert it into the cookie press.  Experiment with different shapes and colors of cookies.

     

    imageBake 12-15 minutes in a 350 degree oven.

  • Chocolate crinkles!  I also use half vanilla extract and half peppermint extract instead of all vanilla to make them a little more holiday-ish.

    Or...shortbread dipped in chocolate with sprinkles, chopped up candy, etc.

  • christmas is allways my grandmas almond shortbread! but Lexi and I just made peanut butter cookies for her class! Super easy and yummy!

  • Lately, I'm downright obsessed with Gingerbread.  McCormick's Gingerbread cookie recipe with their royal icing = to die for.  Mmm...

  • I need to get on this but I like to make spritz (either regular or I make peanut butter and use my cookie machine) and snow balls (also called Tea Cakes and Mexican Wedding Cakes).  I usually make 4 different kinds but I'm running out of time this year.  I need at least one kind for santa!!!
    Nobody said life would be easy, they just promised it would be worth it.

  • Sugar cookie with powdered sugar frosting...no one can really make them like my Grandma used to, but we have the recipe and we try every year. The hint is getting the cookie just soft enough and the frosting exaclty powder sugary enough. LOVE them.

  • Peanut Blossoms.  Recipe on the back of Hershey's Kisses.
  • Reindeer cookies.  Make your favorite peanut butter cookie recipe, shape them like ovals on a cooking sheet, and before baking, add pretzels for the antlers (I just use the entire tiny twist, but if you're more creative, you can break it into more of an antler shape), chocolate chips for the eyes, and a red M&M nose.  Also works for cupcakes.  :-)

    I just  made the Mexican Wedding Cakes with chestnuts for a work party. They are pretty delish.  See Smitten Kitchen blog, but I found roasted chestnuts already in a jar at Whole Foods, made it so easy.

  • These are more of a melt-in-your-mouth type of sugar cookie.

     

    Sandi's Gram's Sugar Cookies
    2 cups of sugar
    2 sticks of margarine (1 cup)
    2 eggs
    1 cup sour cream
    1 tsp vanilla
    1 level tsp baking soda
    1 level tsp of baking powder
    4 cups of flour

    Mix it all together and drop about a tablespoon full on the cookie sheet. Sprinkle with sugar and bake at 375 for about 10-12 minutes.

    Makes about 6 dozen
