Yes, absolutely. I skip the mixer if I'm just making a single batch, and use my hand beater or the whisk attachment on my hand blender. If you don't have either, you can still do it with a whisk and a strong arm, if you run the butter through defrost for about 15 seconds to really soften it up. I've also completely melted the butter to mix the wet ingredients, and then chilled the dough afterwards to firm it back up, and it worked out fine.
Here is an easy one I've done in the past. You make the dough into a log, roll it in your coating of choice (or you can do mix-ins), chill then slice and bake it:
Press store bought choc chip cookie dough into 9x13, cook 7 min. Pull out of ofven, top with several globs marshmallow puff. Cook 1 min, spread marshmallow around. Top with rice check and red and green m&m, cook a few more minutes.
Crinkle cookies (chocolate cookies with powdered sugar, they are Betty Crocker, google them!)

Shape sugar cookies into triangles and bake. Use choc covered pretzels for antlers, red M&M for nose, brown M&Ms for eyes. Use white frosting as glue.

Don't laugh, but I buy that Betty Crocker mix that is in a bag (they have several different flavors from Peanut Butter to choc. chip and oatmeal). I get the peanut butter kind but add some chocolate chips to them! They are so good and don't taste like they were once a powdered mix in a bag. You still have to add some butter and eggs, so there is still some work involved!

You can always do some version of Rice Krispie treats- either wreaths with cornflakes and green dye, with red hots as berries, or regular treats cut wtih cookie cutters.

Honestly? Just buy some Break 'n Bakes or a tube/tub of premade dough. The kids will never know.
If you want to do the made-from-scratch thing, Chocolate No-Bake cookies are easy/good.....butter/cocoa/PB, sugar melted, then add oats.
