Need a corn bread recipe

  • I wish I did.  My grandpa made the best.cornbread.ever.  He used bacon fat and cracklins and baked it in a cast iron pan that his mom used for years and never washed. 

    God, I miss that cornbread.

  • Why yes I do :D

    2/3 cup butter or margarine, softened 1 cup sugar 3 eggs 1 2/3 cups milk 2 1/3 cups all-purpose flour 1 cup cornmeal 4 1/2 teaspoons baking powder 1 teaspoon salt

    Directions

    1. In a mixing bowl, cream butter and sugar. Combine the eggs and milk. Combine flour, cornmeal, baking powder and salt; add to creamed mixture alternately with egg mixture.
    2. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 400 degrees F for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

  • I think T.bird has a good one on her food blog, but I don't have a link to it.
  • Mine is really simple it was my grandfathers recipie and handed down from when I was five.

    First off grease your pan with baccon grease for golden brown top or use plain shortening.

    2 cups self rising flour

    2 eggs

    3 cups corn meal

    2 cup buttermilk or milk Add more if too thick or just add water.

    Mix together pour in pan bake @ 350 for 20 - 30 min

    PS I'm from the South and we eyeball so its probably more milk than it states like I said this is from the top of my head and I just add more milk or water if it still looks too thick and lumpy.

  • This isn't a typical corn bread recipe, it's more like a moist corn "bake".... that's what I call it, but it's delicious and different!

    Mix 1 15 oz can kernel corn (drained), 1 15 oz can cream corn, 1 box Jiffy corn bread mix, 1 stick of butter melted, and 8oz sour cream. Spray 8x8 pan, bake at 350 for about 1 hour.

  • LOL my food blog has like 3 recipes on it (what can I say I'm lazy), but one of them is for a REALLY REALLY good "mexican" cornbread. It stays really moist, I can't stand dry a$$ cornbread.
